Banana Chia Pudding with Amaranth

I love Chia. It can be so useful, plus it’s super healthy! For me, Chia pudding is the ultimate healthy version of ‘normal’ pudding. I often eat it for breakfast, simply with a bit of cinnamon and topped with fresh fruit. But for this version, I wanted to do something more complex: more ingredients -> more deliciousness! You can eat it as a whole meal, perfect for breakfast or even lunch or dinner 😉

Because of the banana, the pudding is less slimy and more creamy, and it’s also sweeter (not to mention that it tastes like banana pudding!) Because of its sticky, firm texture and because it’s so filling, the amaranth is the perfect energy fuel you need to stop that tummy of yours from growling. (see here to learn more about amaranth) Last but not least, add cinnamon and you’ll feel like it’s already christmas!

Banana Chia Pudding with Amaranth (makes one)

  • 2 tbsp chia seeds
  • 1 cup nut or oat milk
  • 1 mashed banana
  • 1 tsp cinnamon


  • 1/2 cup cooked amaranth
  • 1 tsp cinnamon
  • 2 tsp cacao nibs


  • banana slices for decoration


  1. Mix the ingredients for the chia pudding in a drinking glass or a small bowl and stir with a spoon until creamy. This may take a while, but still not as long as normal chia pudding.
  2. In a small bowl with a spoon, mix the cooked amaranth with cinnamon and cacao nibs. May be hard because of the sticky texture, but don’t give up! 😉
  3. You can arrange your chia pudding dessert dish now just how you like it, either in a bowl or a large drinking glass. I used a drinking glass. Put about half of the amaranth mixture at the bottom, fill up with the chia pudding and put the other half of the amaranth on top. Decorate with banana slices if you like. (That’s what I did, you can as well arrange it however you want)
