lalala. Don’t know what to write. No, wait, i know. This is so ridiculous but i want to say it. Today was my last class test in high school. Like, ever. There will still be the A Level exams but this was the last ‘normal’ one. Guess what it was? English. And. I. Screwed. It. Up. Seriously, i was sitting there, thinking, what am i doing here? Where did all the english words and phrases go? And then: Are you being serious? This is your last fucking class test plus it’s your freaking best subject and this test is ridiculously easy. But yup, i screwed it up. (I know you’re probably not interested in my epic failures at school but i’m writing this paragraph for me and then i’m not even sure you’re reading this right now so… just skip this if you’re more interested in lemon coconut balls than in school stuff.)

About these little thingies i called lemon coconut balls. Maybe the name speaks for itself: They taste like lemon and coconut, and they’re chewy. And delicious. Need i say any more? No? Let’s head straight to the recipe then. Ah, well, not straight away. Sorry, but i forgot something. There’s a little story to these babies. I made a whole bunch of raw treats last weekend for the guy that made it possible for me to have this blog. (Big big thank you!!) One of them were these lemon coconut balls. I’m only posting these because the other stuff was either something i already posted or was made late in the evening and i’m not that consequent with taking photos when i’m tired. Probably it would be a good idea to only start a project when i got enough time to take photos afterwards. And enough time fo not getting stressed during the process. Well, nobody’s perfect. Will definitely try to change my food-recipe-creating-making thing habits. (Yes, i know that word kind of thing up there doesn’t exist.)

lemon coconut balls

  • 3/4 cup cashews (soaked in water for at least 2 hours)
  • 1 cup coconut flakes
  • 5 medjool dates/ 1/2 cup small soft dates
  • 2 tbsp lemon juice
  1. How to make? Reeaally simple. Blend everything in a food processor until nice and sticky. Take small amounts of dough and roll them in your hands into balls.
  2. Coat them with more coconut flakes and place them in the fridge. You can store them there for several days.
