Blueberry chia jam (good for you!)

I don’t know if it is because it’s Sunday (i wrote this on a Sunday, but i won’t delete it now ;))  , but i’m in a particularly good mood today. Let’s talk about everything that’s going on in my mind right now first, then move on to the subject of this post. Okay

I’ve been trying out @earthyandy’s meal plan to see if it’s the way of eating that’s right for me, the kind of diet that makes me feel the best i can feel… aaand it is!! I’ve only been trying it out this past week now, but i can already say that i feel better, my skin is clearer, and my tummy absolutely loves it! Oh, wait, i didn’t mention what that all is about: if you don’t know who @earthyandy is, she’s an absolutely fabulous, inspiring, beautiful vegan girl living in Hawaii with her family (her kids are the cutest!) Check out her Instagram account or her website, her photos and her food are absolutely gorgeous! The meal plan she shares on her site is all about clean and plant based eating for feeling the best you can feel. We’re talking about smoothies, smoothie bowls, salad, fruits, vegetables, soups etc. here.

At first i was like, but i can’t possibly survive on only green smoothies and salad all day! But then i tried it and, hey, you can’t imagine how satisfying a big salad in the evening can be! Besides, it’s not only about smoothies and salad. Eating clean and plant based is soo much fun when you keep being creative (and go get inspired on Instagram and Pinterest;)

I just had two oranges and a mango for lunch, with a tablespoon of goji berries sprinkled on top, and when i started eating the mango i had to smile for no particular reason. You can’t imagine how much fun it can be when you’re eating something and it just tastes so good and you know that it’s actually good for you and when you have finished eating, you’re not hungry anymore but totally satisfied.

Ah, haven’t mentioned this yet: I’m a person that’s always hungry. Like, literally. Before trying out this diet, i would eat something and about 10 mins later, i would walk to the fridge again because i was still hungry. This was so annoying. And i felt really bad about it because i couldn’t think of much more than food all day (i still do think of food very often, but only because i love creating recipes and stuff, not because i’m hungry!) I also used to get ‘hangry’ all the time, and that’s completely gone now! This is so exciting i’m freaking out haha! I actually love eating like this now, after only one week!

Ok, moving on now.

This Blueberry Chia Jam is so incredibly easy to make, absolutely foolproof! If you’re a blueberry lover like i am, you’ll gonna love this one! It’s not as sugary as conventional jams so it’s also healthier, but promise it’s sweet enough 🙂

Blueberries themselves are already super healthy, and the chia seeds only add up to that! So don’t be shy to use this blueberry jam to pimp your oatmeal, or as a topping for a smoothie bowl, or as a cookie filling… The possibilities are endless!

Here’s the recipe. Have fun 😉

Blueberry Chia Jam (makes 1 jar)

  • 2-3 cups fresh or frozen blueberries (i used frozen)
  • 2-3 tbsp coconut sugar
  • 2 tbsp chia seeds
  • 1 tsp ground vanilla

In a pot on low medium heat, warm up the blueberries until they are swimming in liquid while stirring occasionally. This may take about 30mins with frozen blueberries. Add the chia seeds, coconut sugar and vanilla and keep stirring until a jam-like texture forms. Add more sugar if you like, or don’t if you are already okay with the sweetness 🙂

And that’s it! It’s so easy, and you could actually substitute the blueberries with any soft fruit you like! You can store your jam in the fridge for a few weeks.
