chocolate + mango nicecream with chia pudding <3

Who loves ice cream? Hands up! I know you do 😉

I actually never considered making an extra post about nice cream, because i thought it was obvious how you make it, but i guess a lot of people don’t, and the reason i thought it obvious might be because it is for me… So this is for all the ice cream lovers out there, those of you who want a reason to eat the most delicious ice cream on a daily basis (not even kidding :P) and have it cruelty-free and guilt-free. Yup. You can have it. Cause what’s the point of eating food that’s bad for you, the environment, and is harming innocent beings? Nah, we don’t want that.

So if having a super healthy, harmless alternative sounds as amazing to you as it does to me, scroll down for the recipe.

chocolate and mango nicecream with chia pudding

(makes 1 big portion)

chia pudding

  • 2 tbsp chia seeds
  • 1 cup almond milk (or any plant based milk)
  • 1-2 tsp coconut sugar/ maple syrup (optional)
  • 1/2 tsp ground vanilla (optional)
  • 1 tsp cinnamon (optional)

chocolate nicecream

  • 3 frozen bananas, broken into chunks
  • 1/3 cup plant based milk
  • 1/2 tsp ground vanilla
  • 2 tbsp cacao

mango nicecream

  • 2 frozen bananas, broken into chunks or 1 banana (not frozen)
  • 1 cup frozen mango chunks
  • 1/2 tsp vanilla (yes, i put vanilla everywhere)
  • 1-2 tsp maca powder (optional)
  • 1/2 cup plant based milk

To make the chia pudding, combine all the ingredients in a bowl, using a spoon or whisker, and stir until it starts to thicken and everything is well combined. Set aside while you make the nicecream, so it can thicken some more until you’re ready to eat it.

For the chocolate nicecream, first blend the bananas and plant milk in a high speed blender (a regular blender works too, it just takes longer and you’ll have to use a spoon more often to scrap down the sides and stir a little). It should become creamy like actual ice cream. Then add the vanilla and cacao and blend again until well combined. Set the ice cream aside in a bowl (i put it in the freezer so it doesn’t melt).

For the mango nicecream, blend the banana, mango and plant milk first again until creamy and then add the vanilla and maca and blend again until well combined.

Take your favorite bowl or jar and put the chia pudding and ice cream in it in any way you want, time to get creative! You can also top it with fresh fruit or nuts/seeds or coconut flakes or nut butter – so many options! Or just leave it like that, i think it’s pretty awesome in itself already 😉
