Spring is coming! And you know what? I think for…
At first i didn’t want to share this recipe, i thought it was too easy and boring. But then i started liking these pictures, and a lot. And then i thought, what if it isn’t really about the recipe, but about the idea? Isn’t it even better if the recipe is real simple, easy to make and yet so beautiful, delicious and simple?
Plus, with christmas coming closer every day, i also thought colorful ice cream bars with chocolate would be an amazing idea for a christmas dessert! (Do you love christmas as much as i do? It’s so magical! If you’ve been reading this blog for a while, you’ll know i lovee magical things haha) They’re the perfect weapon against suspicious non-vegans who think ‘vegan food is boring and disgusting’! And they’re as healthy as it can get, with no unhealthy, unnecessary stuff whatsoever. Are you excited yet? If your answer is ‘yesss!!’, then scroll down to check out the recipe 😉
vanilla + cherry cookie dough ice cream bars
500g frozen cherries
500g frozen banana chunks
1-2 cups plant based milk
2x 1 tsp ground vanilla
1 cup almonds
1/2 cup coconut shreds
1/2 cup soft dates
2 tbsp cashew butter / any nut butter (optional)
200-300g dark vegan chocolate
Start by making the cookie dough: this recipe is not like actual cookie dough, but it’s really healthy and still very delicious! It’s simply a bit different from the actual, rather unhealthy thing. Grind the nuts and coconut shreds in a food processor, then add the dates, water, 1 tsp vanilla and nut butter (if you have and want to add it) and process until everything sticks together evenly. Form little balls with your hands and place in a bowl in the fridge.
Now make the ice cream: Start with whatever you want, either cherries or bananas. To make the vanilla ice cream, simply mix the frozen bananas, 1 tsp vanilla, 1 cup of plant based milk in a high speed blender. You will have to press down the bananas a little or a lot, depending on the power of your blender. Blend until real smooth. Fill the ice cream in a rectangular pan, spread evenly with a spoon or spatula, and press some of the cookie dough balls into it. Place in the freezer while you make the cherry ice cream. Blend the cherries and 1 cup of plant based milk until real smooth. If you want it to be more creamy and less sorbet-like, you can also add 2-3 bananas. Add the cherry ice cream to the pan and press a few cookie dough balls into it once again. Smooth it out and pre-cut small squares before putting in the freezer again. Leave in the freezer for a few hours.
After a few hours, take the ice cream bars out of the freezer. Cut them carefully and place them on a plate. Melt the chocolate and pour over them with a spoon. Now you’re done! (Promise, it’s actually easier than you might think now!)
