almost raw pumpkin gingerbread cheesecake

I know i mostly do raw stuff, because i just love that it’s so healthy and delicious at the same time, and i feel like i can get more artsy with that stuff. But once in a while, i love baking something. Especially the time around christmas!
So remember how i talked about christmas some posts back, and that i love it so much because it makes me feel like there’s magic in the air? There are so many things i consider magical right now: looking out and seeing snow flakes everywhere (snow in early December! That’s a rare one guys!), opening the advent calendar every day, coming up with gift ideas for everyone, making the whole house smell like cookies, sugar and spices…
This apple pie does exactly that: it makes everything smell like christmas. It’s got cinnamon (obviously), nutmeg, a hint of carob and vanilla and sage. I love adding herbs like sage to sweet things, it gives the whole thing a little extra interesting flavor (in a good way though!)
It’s also pretty healthy, no nasties to be found in there. You can even make it completely sugar free if you want, cause the apples are already sweet enough themselves! If you do want a little sugar though, i included coconut sugar in the recipe 😉 oh and if you want it gluten free, just sub the spelt for gluten free flour!
ok i know i know i always talk too much about this and that, so here’s finally the recipe, scroll down!
rustic spelt, almond & sage apple pie
1 cup almond flour
1 cup whole spelt flour
1 cup coconut oil (firm)
2 tbsp cold water
2 tbsp vanilla extract
2 tbsp coconut sugar (optional, will make it taste more like cookies)
6 medium apples, peeled
2 tsp arrowroot starch
2 tsp cinnamon
1 heaping tsp carob powder
1/2 tsp nutmeg
2 tbsp fresh lemon/lime juice
1 handful fresh sage leaves (leave some for decoration)
1/2 cup coconut milk
2 tbsp coconut sugar (optional, but will give the whole thing a caramel flavor)
Start with this either the night before or half a day before making the pie: Remove the pits from the apples and cut them in thin slices (ca. 2-3mm). Put them in a bowl and add the spices, arrowroot, lemon juice and chopped sage leaves (remember to leave some for decoration). Take the bowl in both of your hands and shake gently until all the apple slices are covered pretty evenly in spices. Cover the bowl and place in the fridge until you’re ready to make the pie.
For the crust, mix all the ingredients until a dough forms. Line a normal round baking form with parchment paper (cut off the edges). Preheat oven to 150°C. Roll out 3/4 of the dough to 3-4mm, then line the bottom and sides of the baking form with it. Cut off anything that goes over the edges too much. Fill the pie with the apple slices: either one add a time, laying them out in circles, or just put them in without any order (depending on how messy you like it!)
Heat up the coconut milk (make it melt) on lower heat, add the coconut sugar and stir until combined. (The sugar should melt a little too) Pour the mixture over the apple filling. (You can also just leave the coconut sugar out if you want!)
Roll out the rest of the dough for the crust and form anything you want to put on top (i chose a little all around the outline and pressed it down with a fork, and stars in the middle)
Bake in the oven for around 30 mins, or until your gut and nose tell you the pie is ready 😉
Decorate with fresh sage leaves and coconut flour (instead of powdered sugar). I also made some raspberry sauce to eat it with (just raspberries cooked on middle heat with 1-2 tbsp water).
That’s it! Trust me, i know it looks like a lot, but it really isn’t! It’s actually pretty simple and doesn’t take very long to prepare if you plan ahead for the apples. What’s your favorite make-the-house-smell-like-christmas dish or dessert?
