xmas slices: walnut, dried fig & raspberry (raw)

I named these awesome healthy indulgent thingies ‘xmas slices’, because i created them in celebration of christmas season. They are some of my favorite ingredients combined that taste like magic and christmas (in my opinion).

I know, there’s a really high frequency in which the word ‘magic’ or variations of it is used on this blog. Trying to reduce that haha. I guess it’ll get annoying at some point. But not yet!

 So, again about these bars: They’re really easy to make, and you can prepare them ahead of time, so they’re actually perfect for dessert on christmas eve or any other festivities! You just make the base, add raspberries, whip up the chocolate, pop the whole thing in the fridge and you’re done! More time for things that are more important to you than food preparing. (Not for me though, i love making food for people, as you perhaps can tell)

So what’s inside these babies that taste like christmas? It’s all about the base that pairs amazingly well with the dark chocolate and the raspberries. We have walnuts, dried figs, dates, coconut, and some spices that add a little extra flavor. No nasties, and allll the deliciousness. Scroll down for the recipe.

base

  • 1 cup ground walnuts
  • 1/2 cup coconut flour (grind dried coco flakes)
  • 1/2 cup chopped dried figs
  • 1/3 cup chopped soft dates
  • 2 tsp gingerbread seasoning / cinnamon+nutmeg
  • 1/3 cup maple syrup
  • 2 tbsp melted coconut oil
  • 2 tbsp freshly squeezed orange juice or water

chocolate

  • 200g cacao butter
  • 2 tbsp coconut oil
  • 5 tbsp raw cacao
  • 2-3 tbsp maple syrup
  • 1 tsp vanilla

 

  • 200g fresh or frozen raspberries

To prepare the base, gently combine all the ingredients in a big bowl using your hands. Knead until everything sticks together. Line a rectangular form with parchment paper and spread the dough on the bottom. Press down with a glass or spoon until it’s even. Add the whole raspberries on top. Place in the freezer while you prepare the chocolate.

For the chocolate, melt the coco oil and cacao butter on lower heat. Add the remaining ingredients and gently stir until well combined. Pour over the base and place in the freezer again for 10-20mins.

Cut into pieces and store in the fridge (or eat them right away, i wouldn’t judge you!)
